We Cooked with a Celebrity Chef on the Chuk Kitchen Box (And the Results Were Delicious)

Last summer, we decided to hit the campsite with celebrity chef Josh Gale, you might know him as @thechefoutwest, to put the Chuk Kitchen Box to the test. No assistants. No fancy kitchen. Just a few ingredients, a cast-iron pan, and one of the most organized outdoor cooking setups you can get your hands on.

Then he showed us how it’s done with a simple, elevated dish that wowed us: Rum Butter Peach Pork Chops. 

The Recipe: Rum Butter Peach Pork Chops (Camp Edition)

This is one of those meals that feels fancy but is easy enough to cook over a campfire or propane stove. All you need is one good pan, a little prep, and a nice, organized setup.

Ingredients

  • 2 bone-in pork chops
  • Seasoning of your choice
  • 3 tablespoons butter
  • 2–4 peaches, pitted and sliced
  • 2–4 tablespoons dark rum
  • 1 bunch fresh mint
  • 1 bunch fresh basil
  • 1 bunch Swiss chard, stems trimmed

Instructions

  1. Season the Pork Chops
    Hit both sides with your seasoning of choice.
  2. Sear the Pork Chops
    Heat 1.5 tablespoons of butter in a skillet over medium-high heat. Add pork chops and sear for 4–5 minutes per side, until golden and cooked through. Remove and let them rest.
  3. Cook the Swiss Chard and Peaches
    In the same pan, reduce heat and add the rest of the butter. Toss in the chopped Swiss chard and sliced peaches. Season lightly. Sauté for 2–3 minutes until they begin to soften. Set the greens aside, leaving the peaches in the pan.
  4. Add the Rum
    Carefully pour in the dark rum. Let it bubble for 30 seconds while it blends with the butter and peach juices.
  5. Slice, Plate, and Garnish
    Slice the pork chops, layer over the greens, top with peaches, and drizzle with that hot, boozy rum butter. Finish with fresh basil and mint for a burst of flavor.
